coconut chicken curry

A long time ago, I loved a blog called Rookie Cookie, which sadly doesn't exist anymore. The author, Whitney Ingram, went on to write a lovely cook book called The Family Flavor. Whitney had all kinds of delicious recipes on her blog and one of them was a chicken curry that was so easy and delicious. I adapted this a bit to suit my fancy and it's a keeper! I recently discovered big packs of vacuum sealed rotisserie chicken breasts at Costco and I think it's a great price and so easy! I put them into little baggies of individual portions and freeze them for a quick lunch to add to salads, but they're also really handy for a quick meal like this! I just pop a few of the baggies into the fridge in the morning to defrost and then it takes about 30 minutes to make this meal from start to finish!
2 tablespoons olive oil
1 yellow onion, thinly sliced
2 teaspoons curry powder
1/2 cup plain Greek yogurt
1/2 cup canned coconut milk
1 teaspoon kosher salt
1/2 teaspoon pepper
1 (15 ounce) can diced tomatoes, drained
1 rotisserie chicken, shredded
2 cups cooked white rice
fresh cilantro, chopped

In a large pan, heat oil over medium high heat. Add onions and saute until golden brown and softened. Sprinkle in curry powder and cook, stirring for 1 minute until fragrant. Add yogurt and coconut milk and simmer gently for 3 minutes. Stir in salt, pepper and diced tomatoes, Add chicken and let simmer until chicken is warmed through. Serve over rice with cilantro on top.

  2. I had forgotten about the Rookie Cookie! It was a good one. We LOVE curry over here. Def gonna try this. I wonder if Sam's Club sells vacuum packed rotisserie chicken.....cause that sounds delightful.

    1. Yes, I use a whole one. It makes a good amount of food. We have leftovers for another meal, but with all the boys in your family, it might not be so much.
