the perfect meal

Last night, after I got home from getting my hair done by the fabulous Erin Marie, I popped into the kitchen to help my mother make dinner. While she finished steaming the veggies, I started to grill the fish and in about 30 minutes we were done. My brother (a.k.a. "Mr. Nielson" for you NieNie readers - and, really, who isn't?) came over for dinner too because the lovely Mrs. Nielson is in Utah for a few weeks and he just couldn't handle eating cereal again.

Sidenote: Ironically, that brother of mine still has a big bowl of cereal after every dinner even if he's pleasantly full. That's just how he is.

Anyway, as we sat down to dinner my dad made the comment, "In my opinion, this is the perfect meal."
And truly, it was a great meal. Tender red beets with a dash of vinegar on them, carrots, potatoes, zucchini and broccoli all steamed with melted mozzarella on top and a halibut fillet that I sauteed in a grill pan with some chopped garlic and tarragon.

Very satisifying and oh, so healthy.

P.S. Here a little "lizzy gets fit" update - I've lost 10 pounds and I'm keeping it off! Go me!

  2. Julie used to do my hair but Erin's my cousin and you have to support your family (although she gives me such a great deal - it's more like she's supporting me!) Julie's great though! I recommend her to anyone!
