weekly menu

As a semi-follow up to my post last week about menu planning, here is my family's menu for the week (if you need inspiration). I always do my menu planning on Mondays but since we still had guests in town until last night, I didn't get to it until today. It feels good to get back on the track with eating right and drinking more water. Baby needs it! Also, we found out the baby's gender yesterday so I'll blog about that later. :) What are your guesses?!

Monday: Fish Taco Bowl with Avocado and Cilantro
Tuesday: Roasted Vegetable Quinoa Salad
Wednesday: Southwest Chopped Salad with Cilantro Lime Dressing
Thursday: Roasted Buddha Bowl over Brown Rice

Friday: Hearty Vegetable Minestrone
Saturday: Salmon Burgers and Sweet Potato Wedges
Sunday: Ricotta Gnocchi with Roasted Brussels Sprouts

  2. I've never heard of salmon burgers... Definitely going to try those out! Salmon is a favorite in my house.

  5. All of those meals look delish! I've sent all of my friends to your blog for recipes because they always love what I make and most of it comes from either you or Ina Garten.

    As for your sweet new baby, my guess is a girl although having 3 boys in a row is wonderful too. My husband is from a family of boys and they LOVE their Momma.

  9. These looks delicious! How do you work these meals with your kiddos? For example, with the salad, do your boys eat it as is, do you serve individual components from the meals you are making, or do you make a kid-friendly alternative?

    1. Hi Sarah, Our kids eat what we eat. I don't make them another meal (ain't nobody got time for that - ha!) but lettuce is pretty hard for little kids to eat so for the salad I put a little of the beans and corn on the bottom of the plate, added tomatoes, cheese, avocado and a little dressing and they gobbled it up. With Fritz, I even cut up tiny pieces of lettuce and he ate them. Since he's a baby, I made sure they were really small so he wouldn't choke. :)
