hot fudge sundaes

We made some new friends last week so we invited them over for ice cream sundaes. They have a little boy who is 10 months older than William but that didn't stop them from playing.

Mostly he just had a great time placing soft objects on William's head and watching him squirm until they rolled off.

It was most entertaining.

We intended to play games but ended up just talking and telling stories about crazy things we did when we were younger to get grounded, punished or (ahem) in big trouble - don't worry. It wasn't anything really naughty! I had such a good time and it made me grateful again for all the good friends I have here in San Diego. It makes being away from my family and friends in Arizona sting just a little less.

I do have to mention that the ice cream sundaes turned out delicious so I have a few recipes to share. If I had been more ambitious (or more willing to go back to the grocery store) I probably would have added some chopped walnuts, caramel sauce and cherries to the bar but I thought they were fabulous as is.

First, the brownies. I made Rookie Cookie's sundae brownies and they were oh so good. I've made them before just for plain ol' eatin' and they were really good so I thought that I would use them for the purpose they were intended. She was right (as she often is). They make delicious brownie sundaes. It is also amazing how easy they are. Seriously, just as easy as a box and WAY better.

I also made hot fudge sauce and let me tell you, hot fudge sauce should not just be left up to gourmet chocolatiers. This was so easy to make, tasted amazing and I didn't even use good quality chocolate - just Hershey's chocolate chips I had in the freezer. If I had used Ghiradelli or Godiva, maybe it would have been better? Three ingredients will get you a delicious pot of chocolate gold.

Sundae Brownies (via Rookie Cookie)
1/2 cup butter

1 cup sugar
2 eggs
1 tsp pure vanilla extract
1/3 cup cocoa powder
1/2 cup flour
1/4 tsp salt
1/4 tsp baking powder
Set oven to 350 degrees. Spray an 8 inch pan with nonstick spray.
In a large sauce pan over medium high heat, melt the butter. Remove from the heat and add the sugar, eggs and vanilla. Whisk until eggs are incorporated. Add cocoa powder, flour, salt and baking powder. Whisk until combined.
Pour into the pan. Bake for 25 -30 minutes, or until middle is set and a toothpick inserted comes out clean.
 
Hot Fudge Sauce
1/2 cup heavy cream
1/4 cup light corn syrup
6 ounces semi-sweet chocolate chips
 
In a medium or small saucepan over medium heat, bring cream and corn syrup just to a boil, stirring, until the syrup has liquified (about 2 minutes). Remove from heat and whisk in chocolate until melted. Serve hot. Can be refrigerated and reheated.

  3. That is so cute that William was playing with a kid that was almost twice his age! Babies just love people that are around their size! :) Those sundaes look AMAZING!! MAKES ME WANT TO DRIVE OVER THERE RIGHT NOW TO EAT ONE!!!!

  6. The sundaes were beautiful, but tasted even better! Thanks again for having us over, it was really fun to just chat. Bossy loves William, I'm just afraid he'll hurt the poor little guy!

  8. So glad to hear you approve of the brownies. And that chocolate sauce looks luscious. I have never made my own chocolate sauce. Might maybe may make this one.

  9. Ok I just wrote down the recipe (because my printer isn't working). This one is for sure being made tonight!! Can't wait to tell you how they turned out :)
