coconut chicken and rice with sesame garlic broccoli

Here's the last recipe that I made last week. It was really delicious and I made all of it on the grill except for the rice. Three cheers for not heating up the house! First, I used this recipe for the chicken and the coconut rice. Both were delicious and I served it with some extra lime and lots of cilantro on top. Then, for our vegetable, I made some of our favorite broccoli: Sesame Garlic Roasted Broccoli. This time though, I made it on the grill along with the chicken and it was great!
SESAME GARLIC ROASTED BROCCOLI (on the grill):
2-3 large heads of broccoli, trimmed and cut into stems
3 cloves of garlic, peeled and smashed
2 tablespoons low-sodium soy sauce
2 tablespoons olive oil
1 tablespoon sesame oil
toasted sesame seeds

Turn on grill and preheat to 450 degrees. Line a baking sheet with aluminum foil and spread evenly with broccoli and garlic. Drizzle with oils and soy sauce and stir to coat. While the chicken is cooking (if you're using the other recipes) place on the top rack of your grill so the pan is not on direct heat. Roast until just fork tender (about 15 minutes). Remove from grill and sprinkle with toasted sesame seeds and serve.

  1. I love Mel's Kitchen! Her S'mores Bars and Salsa Verde Tostadas are my fave. Coconut and lime were just made for each other!
