everything cookies

So, I know you know that I love me some cookies. I love that these are full of everything good - walnuts, coconut, chocolate, peanut butter, butterscotch, oats. They're awesome. You can do anything you want really, but I recommend this combo. It's the best!

The other night we had a bonfire with some friends and I made these to take with us. They were a hit and my friend's son even declared them "the best" but he is the nicest kid ever, so I'm pretty sure he would have said that even if they were inedible. Luckily, I think he's right. They are really good!
2 cups (4 sticks) butter, softened
3 cups packed brown sugar
4 eggs
3 Tablespoons vanilla extract
2 teaspoons baking soda
1 teaspoon cinnamon
2 cups all-purpose flour
2 cups white whole wheat flour
3 cups old-fashioned oats
2 cups chopped walnuts
1 bag (15 ounce) sweetened shredded coconut
1 bag (10 ounce) semi-sweet chocolate chips
1 bag (10 ounce) butterscotch chips
1 bag (10 ounce) peanut butter chips

Preheat oven to 350 degrees. Beat butter and sugar together in a stand mixer until creamed. Add eggs, vanilla and baking soda. Continue mixing until light and fluffy.

Add cinnamon, flours and oats and stir at low-medium speed until well-mixed. Add walnuts, coconut and all the chips and mix until well combined. Using a cookie scoop, place dough on a cookie sheet and lightly press each cookie down before placing in oven. Bake for 10 minutes until the edges are starting to brown.

  1. Those cookies look divine. I'm curious about the map in the background. I grew up on the Central Coast and still currently live in California. That map would be really cool to have.
