the most important meal

One of the best things about me (I love this sentence already!) is that I am really good about eating breakfast. It's my FAVORITE and it really gets my day started off right. I freely admit that pancakes are one of my top five favorite foods of all time but they're not exactly great for a healthy weight. Something that I love to do is make an egg scramble and it's delicious - in fact, William loves it too and it's a great way to get him to eat his veggies.
Once a week, I make a big batch of chopped vegetables to use to saute into my egg scramble. Typically, I chop up:
1 large onion
1 large yellow squash (diced)
1 red or orange bell pepper
1-2 cups broccoli florets
1 cup portobello mushrooms
and then I put it all in a ziploc bag and use it throughout the week.

I used to just use regular eggs but I now use a combination of egg beaters and egg whites (I usually buy cage-free eggs and egg beaters but the store I went to this week didn't sell it - we'll live). I really like the high protein/low-fat combo that egg whites provide but I also like the richness of a full egg so I usually do a half and half mixture.
First, heat up 2 teaspoons olive oil in a pan over medium heat and saute a large handful of the veggie mixture for about 6 - 7 minutes until they're softened and have a bit of brown on them. Pour in the eggs and season with salt and pepper. Stir and scramble the eggs until done (I really only cook another minute or two and then turn off the heat - they'll continue to cook). Sometimes I stir in a little bit of reduced-fat cheese and sometimes I'll make a Morning Star vegetable patty and chop it up and stir it in (or sometimes I'll eat it on the side, if at all) and a little salsa on top of the eggs because, you know, it is the #1 condiment in America.
Also, I always have a big glass of water with breakfast. You need it! So, there you have it - my morning routine about 5 days a week. One of those other two days I often have whole wheat pancakes that are delicious, low-calorie, dairy-free and sweetened with a touch of stevia. I'll share the recipe soon!

  1. Mmmmm this looks much better than a cold piece of toast before running out the door. I'm going to be using this recipe now. It makes the day seem a lot happier.

  2. Looks great... and good idea about chopping veggies and putting them in a baggie. I usually have oatmeal with protein powder mixed in. :)

  7. This almost makes me wish I liked eggs. Only almost though. I always struggle to figure out how to eat a high-protein breakfast without eggs. I don't do protein powder, so I'll usually just mix some almond butter into oatmeal with fruit, but nut butter still doesn't have nearly as much protein as eggs.
