poor man's (mock) eclair

A couple of years ago, at a potluck dinner, one of my friends brought a most delicious dessert. I asked her for the recipe and she told me it was incredibly easy! When she wrote it down for me, I believed her! It did look easy but, of course, I tweaked it a bit over the last several months to make it the way I wanted. The original recipe calls for Cool Whip and canned chocolate frosting and I personally prefer fresh whipped cream and homemade chocolate frosting. I've tried a few different frosting recipes, including just a standard chocolate buttercream, but it hardens too much. This is the perfect frosting for this! It's not the prettiest dessert out there but it sure does taste delicious, especially when you're craving something smooth and custardy!
2 (small) boxes instant vanilla pudding
3 cups milk
1 cup heavy whipping cream
1/2 cup powdered sugar
1 box graham crackers, whole
Chocolate frosting (recipe below)

With an electric mixer, beat pudding with milk for 2 mintues in a large bowl. Set aside for 5 minutes (or while whipping cream). In a small bowl, whip cream until you have soft peaks. Add powdered sugar and beat another few minutes until thick. Gently fold whipped cream into vanilla pudding until combined. Layer the bottom of a 9x9 inch pan with whole graham crackers, then half of the pudding/cream mixture. Add another layer of whole graham crackers and the remaining pudding/cream mixture. Top with another layer of whole graham crackers and pour on chocolate frosting. Cover and refrigerate for at least 8 hours before serving.

Chocolate Frosting
2 ounces unsweetened chocolate
2 teaspoons light corn syrup
2 teaspoons vanilla extract
3 Tablespoons butter, softened
3 Tablespoons milk
1 1/2 cups powdered sugar

Melt chocolate and corn syrup in a medium mixing bowl in the microwave and stir until smooth. Add the rest of ingredients and stir together until smooth and shiny.
