eggs-actly

Small details of my life make me happy. Like when I opened up my Eggland's Best egg carton to transfer my dozen eggs into my special blue egg crate (that I love oh, so much), I noticed that each egg had "EB" stamped on them - like they were laid just for me.
Oh, and I also really just love eggs. I have a "steamed egg on toast" most mornings. It's one of my favorite things and I craved it daily when I was pregnant with William. I melt about 1 teaspoon of butter in a hot pan and crack one or two eggs in there. Then I put a few teaspoons of water in the lid and pour it over the pan and "steam" the egg(s) until the whites are cooked but the yolk is runny (that's how I like it). It only takes a couple of minutes. While the eggs cook I toast one piece of whole wheat bread. Once their done, I lay them over the toast and break up the whites and the runny yolk so that it covers the toast. So good with a little salt and pepper. Yum!

  1. Love, love the blue egg tray. We pick up our eggs at a farm every week and there is always a few different colored ones that would look fantastic in a pretty egg tray.

  3. mm, that is my favorite way to eat eggs, but I usually do it on the weekends. Not enough time in the am before going to work. :(

  4. Sounds like a soft-boiled egg on toast......I always craved that when I was pregnant, too!
