stir fry pasta

My oldest sister, Debbie, is the queen of easy and delicious meals. She is known in my family for throwing together something from ingredients in her fridge and it turns out great. This is one of those "I don't want to cook tonight" meals. It's easy and you can add whatever veggies you have on hand. I didn't add the red bell pepper because mine was a little foochy looking. This recipe also makes me laugh because my sister hates Italian food and/or pasta and loves all things Asian but her son loves pasta and this is his favorite thing next to spaghetti. I just love how even when she makes pasta that she stir-fries it!
2 Tablespoons olive oil
1 medium onion, diced
2 chicken breasts, diced
4 cloves garlic, minced
2 cups broccoli florets
4 carrots, peeled and sliced
4 celery stalks, diced
2 green onions, diced
1 bell pepper, diced
1 (16 ounce) box rotini pasta (or other spiral noodle)
1/4 cup cooking sherry (or chicken stock)
1/4 cup butter
2 teaspoons Italian seasoning
1 1/2 teaspoons garlic salt
salt and pepper
Parmesan cheese, shredded (for serving)

Set a pot of salted water on to boil over medium high heat. Once boiling, add noodles and cook until al dente.

In a wok heat olive oil over medium high heat. Saute garlic and onions until starting to soften. Add the chicken and saute for 4 - 5 minutes. Add the rest of the vegetables and saute until al dente. Add butter, cooking sherry (or chicken stock), Italian seasoning, garlic salt and salt and pepper to taste. Stir in cooked pasta and serve with shredded Parmesan cheese on top.

  3. you can also fry the pasta to make it a little crispy. it tastes lovely that way! i like to fry my pasta to mix it up. you can do it with any sauce.

  7. hmmm. posted under vegetarian. chicken is not vegetarian. Looks good without the chicken!
