salmon (or other fish) tacos with peach corn salsa

We've been trying to clean out our freezer before our move to Seattle and I put this together for dinner last night and it was DELICIOUS! You may not have all these things in your fridge/freezer like I did but the ingredients are pretty simple. I had some frozen marinated/seasoned wild caught salmon from Costco in my freezer so I used some of it for the tacos (pictured) but I also made another batch of cod with a yummy marinade that was easy to make (recipe below), which I preferred in the tacos. We also had a huge box of the most delicious Utah peaches that are slowly making their way to Moldville, so I whipped up some peach salsa (and added some white corn I had leftover from lunch and a lone avocado from the fridge). We also had a bag of shredded cabbage so I mixed it with a creamy concoction and BAM! Amazing fish tacos that can rival my beloved Tia Rosa's!
LIME MARINATED COD
1 pound of cod, cut into 4" pieces
2 limes, zested and juiced
2 cloves garlic, minced
1/4 cup olive oil
kosher salt and pepper, to taste

Whisk together the lime zest and juice, garlic, oil and salt and pepper (to taste) in a medium bowl. Add fish and stir to coat. Let sit for at least 30 minutes. Preheat oven to 375 and lay fish on a foil lined baking sheet. Bake for 8-10 minutes until fish flakes and is opaque throughout. Take a warmed corn tortilla (I use the "cook your own" kind at Costco) and put a few flaked pieces of fish, creamy cabbage and peach salsa on top.

PEACH SALSA
3 medium peaches, peeled and finely chopped
1 tomato, chopped finely
1 red bell pepper, finely chopped
1/2 bunch cilantro, minced
1 avocado, diced small
1 small jalapeno, minced
1 lime, juiced
1/3 cup sweet white corn
kosher salt and pepper, to taste
+ a drizzle of Agave nectar (or honey), to taste

Combine all in a medium to large bowl and serve on top of tacos.

CREAMY CABBAGE
1/2 head green cabbage, shredded
1/3 cup mayonnaise
1/4 cup sour cream (or sub Greek yogurt)
2 limes, juiced
kosher salt and pepper, to taste

Whisk together mayonnaise, sour cream (or Greek yogurt), lime juice and salt and pepper (to taste). Layer on top of fish and top with peach salsa.
